A 1000-pound cow will calculate to a 620-pound carcass (62%) and 328 pounds of beef (53% of carcass weight). This is what can be expected from a 2yr old grass-fed animal. A ground beef cow over 3 yrs old at an average of 1200 pounds live weight will calculate to 744-pound carcass and 394 lbs of beef cut and wrapped.

We use custom-exempt processing for our bulk beef shares.
A custom-exempt butcher is legally allowed to process an animal only for the owner’s personal use.
Because of this, the rancher cannot legally sell the meat afterward—they must sell part of the live animal first.
